Vanilla Ice Cream
An easy to make, creamy and smooth ice cream

- 250 ml double cream
- 150 ml skimmed milk
- 100 ml water
- 70 g granulated sugar
- 3 egg yolks
- vanilla essence to taste
Preparatory Tasks
Put the cream into a small bowl/jug
Put the egg yolks in a large bowl
Put the sugar and water in a saucepan
Mixing
Lightly whip the cream
Add the sugar/water syrup to the eggs while whisking continuously
Add the vanilla essence to the egg/syrup mix and whisk until it leaves a trail
Add the milk to the lightly whipped cream
Combine the cream/milk with the egg/syrup mix
Freezing
Put the mixture in a suitable container and partially freeze
Remove from freezer when half frozen and beat it again
Return the container to the freezer
