Vanilla Ice Cream

An easy to make, creamy and smooth ice cream

  • 250 ml double cream
  • 150 ml skimmed milk
  • 100 ml water
  • 70 g granulated sugar
  • 3 egg yolks
  • vanilla essence to taste


Preparatory Tasks

  • Put the cream into a small bowl/jug
  • Put the egg yolks in a large bowl
  • Put the sugar and water in a saucepan

Sugar syrup

  • Boil the sugar and water for 5 minutes to make a syrup


  • Lightly whip the cream
  • Add the sugar/water syrup to the eggs while whisking continuously
  • Add the vanilla essence to the egg/syrup mix and whisk until it leaves a trail
  • Add the milk to the lightly whipped cream
  • Combine the cream/milk with the egg/syrup mix


  • Put the mixture in a suitable container and partially freeze
  • Remove from freezer when half frozen and beat it again
  • Return the container to the freezer
