Banana Cake

A really tasty banana cake which is a great way to use up any overripe bananas

  • 2 ripe bananas ideally overripe
  • 170 g self-raising flour
  • 170 g caster sugar
  • 170 g soft margarine
  • 3 eggs
  • Few drops of vanilla essence optional


Preparatory tasks

  • Preheat the oven to 160 C
  • Line a loaf tin with greaseproof paper
  • Thoroughly mash the bananas
  • Place all the ingredients in a mixing bowl
  • Mix to a smooth consistency


  • Pour the mixture into the prepared baking tin
  • Allow it to settle for a minute
  • Bake for 60 minutes (until an inserted skewer comes out clean)
  • Remove from oven and leave to cool on a wire rack
