Banana Cake
A really tasty banana cake which is a great way to use up any overripe bananas

- 2 ripe bananas ideally overripe
- 170 g self-raising flour
- 170 g caster sugar
- 170 g soft margarine
- 3 eggs
- Few drops of vanilla essence optional
Preparatory tasks
Preheat the oven to 160 C
Line a loaf tin with greaseproof paper
Thoroughly mash the bananas
Place all the ingredients in a mixing bowl
Mix to a smooth consistency
Baking
Pour the mixture into the prepared baking tin
Allow it to settle for a minute
Bake for 60 minutes (until an inserted skewer comes out clean)
Remove from oven and leave to cool on a wire rack
